ORGANIC WINE & OLIVES
In 2000 it was decided to enter the organic market. Since then a total of 30Ha of vineyards and 10Ha of olive groves have been planted and cultivated organically. All grapes and olives used for Waverley Hills are cultivated on the estate which is run and owned by the Du Toit family who has over 40 years wine industry experience.

Waverley Hills organic wine is not only a soft, enjoyable wine, but is also clean and free of herbicides and chemical fertilizers; and contains up to 50% less sulphur than conventionally produced wines. All vineyards are irrigated with pure mountain spring water and are located on a natural watershed area where both the Breede and Berg rivers originate. The area is renowned for its diverse Fynbos (indigenous flora) giving the wines a unique herbaceous charateristic. Furthermore, the wine and olive production is certified organic by SGS / LACON and NOP / USDA for America.

Vineyard practices allow only for very small yields and the lustrous south easterly winds contribute to this practice by ensuring very loose bunches and healthy berries. Grapes are harvested by hand at optimal ripeness and are cold macerated for a week before the juice is fermented with specially selected yeast. The wine is gently pressed to produce a medium bodied wine which is smooth with soft ripe tannins, robust fynbos characteristics and has a 5 – 7 year maturation potential. Wines are matured in new French, Hungarian and American oak barrels to create balanced wines that are fruit driven with subtle oak undertones. Waverley Hills also produces superior quality organic olives, olive oil, tapenade, dried olives, wine vinegar and wine jelly.

Visitors can enjoy sampling the estate’s wine and olive products in the tasting room, or dine in the restaurant which boasts panoramic views of the valley. The fynbos nursery brings the Cape Floral Kingdom to your doorstep and these plants can be explored in the nursery, gardens and hiking trail. Weddings, conferences and functions are also held at Waverley Hills’ stylish and versatile venue. Waverley Hills was the first organic wine farm to be awarded Champion Member of the Biodiversity and Wine Inititiative.

Waverley Hills is also involved with the Cape Nature Stewardship Site program. Through this over 20% of the property, including critically endangered veld types such as Breede Shale Renosterveld, Breede Alluvium Fynbos and Breede Shale Fynbos is preserved for posterity. In 2011 and 2012 Waverley Hills was awarded Best Sustainable Wine Tourism by Great Wine Capitals of the Best of Wine Tourism Awards.

The following management plans are in operation on the estate: waste water re-use, waste sorting and recycling, alien clearing, compost production for vineyards, earth worm farming, veld fire prevention, rain water management and weed control in the vineyards by using shade netting. One dam on the farm has been allocated for the conservation of local endangered fish species. Witvis, Rooivlerkie and Cape Curper are being released in the dam to breed. Natural predators are introduced in the vineyards to combat unfriendly insects and pests. A family of white ducks makes sure that the snails are kept to a minimum.
