Waverley Hills Shiraz 2012

Shale soils, with drip irrigation delivering a production of 8 tons/ha.

Fermented at 24ºC in stainless steel, transferred to barrels after malolactic fermentation. After bottling, the wine had 6 months maturation before release.

33 months in second and third fill barrels French barrels with 10% of the wine aged in new American oak barrels.

100 % Shiraz of clone SH 22B

Intense purple centre with ruby rim. Violets and sweet plum aromas are rounded off by red pepper and oaky notes. Subtle aromas of Cape fynbos and rosemary also come through on the nose. On the palate the wine has a soft entry and finishes with white pepper notes.
